At Spier, winter is all about layered flavours and farm-to-table warmth. Their Soup and Wine Pairing is a cosy tasting experience that captures the essence of the season. Each soup is made with fresh ingredients from Spier’s regenerative farm and thoughtfully paired with wines that enhance its richness. This experience wraps you like a blanket in everything we love about winter.
We began with a glass of Spier Chardonnay Pinot Noir Brut 2023. This Cap Classique is crisp and bright, with aromas of green apple and citrus followed by subtle brioche notes that add a touch of elegance and complexity.

Soup and Wine Pairing
White Bean and Truffle Soup
Paired with: Creative Block 5 2021
This velvety white bean and truffle soup, served with a golden garden mushroom toastie on freshly baked sourdough, was all about earthy richness and creamy comfort. The flavours were deep and savoury, with the truffle adding an indulgent layer of umami.
Paired with Creative Block 5 2021, a blend of Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot and Malbec, the wine brought notes of dark berries, chocolate and cedar that echoed the earthiness of the soup. Its smooth tannins and subtle spice lifted and balanced the soup beautifully.
Charred Tomato Soup
Seaward Chardonnay 2024
The charred tomato soup, served with a golden parmesan toastie, offered a perfect balance of smoky depth and bright acidity. The rich, tangy tomatoes brought a vibrant, lively character while the parmesan toastie added a satisfying savoury crunch.
Paired with Seaward Chardonnay 2024, a lightly wooded wine matured for six months in French oak, the pairing truly came alive. This Chardonnay unfolds with complex citrus notes and a creamy vanilla finish. The subtle oak influence adds a gentle sweetness that beautifully softens the wine’s natural crispness, harmonising perfectly with the soup’s higher acidity. Together, they created a fresh yet comforting experience, each enhancing the other with brightness and richness in flawless balance.
Pumpkin Velouté with Goat’s Cheese Foam
21 Gables Pinotage 2020
This silky pumpkin velouté, crowned with a delicate goat’s cheese foam and a touch of gentle spice, was winter in a bowl. Rich, warming and full of depth, the soup offered a beautiful balance of sweetness and tang, with the goat’s cheese adding a creamy, savoury lift to each spoonful.
Paired with 21 Gables Pinotage 2020, the flavours came together in perfect harmony. This full-bodied Pinotage, matured for 18 months in a combination of French, American and Hungarian oak, opens with elegant violet aromas and layers of ripe blackberries and cherries. Hints of graphite and allspice add complexity, while the dense fruit and velvety tannins wrapped seamlessly around the velouté’s warmth and texture. The subtle spice in the wine mirrored the soup’s seasoning, creating a pairing that felt generous, grounded and deeply satisfying.
Produced from a vineyard in unusual proximity to the ocean that benefits from the cool False Bay breezes, this wine forms part of Spier’s 21 Gables range. It pays tribute to the estate’s more than 300-year winemaking legacy and the 21 architecturally gables that continue to stand proudly across the estate.






To end on a sweet note, a rich chocolate brownie delivered pure comfort with every bite. Dense, fudgy and deeply satisfying, it brought just the right amount of indulgence to complete the experience. A little taste of luxury that made the winter moment feel complete.
