Haute Cabrière | Memorable Experience in Franschhoek

Haute Cabrière, the family-run winery and home of Pierre Jourdan, overlooks the majestic and breathtaking views of the Franschhoek wine valley, is located high up on the Franschhoek Pass perched between the lofty mountain tops.

As we welcome the start of the festive season it also signifies so much happening at Haute Cabrière. From the launch of their Spring menu to their wonderful Haute Cabrière Réserve range.

Over the past few years Haute Cabrière has been on a journey of evolution. These include the revamped Terrace Restaurant, a new Head Chef, as well as the addition of a new wine to the Réserve range – the maiden vintage Haute Cabrière Chardonnay Réserve.

Every bottle of Cap Classique should be enjoyed and celebrated in style!

Cap Classique runs in the veins of the von Arnims with Takuan’s father Achim having been one of the pioneers of this style of wine.

This Cap Classique is 100% Chardonnay with 40% French oak and 5 years on the lees, which adds to the wine’s structure and lovely delicate mousse. It has wonderful creaminess and a crisp flavor with refreshing citrus nuances.

The Pierre Jourdan range is a tribute to Franschhoek’s renowned Cap Classiques and history. It is named after a French Huguenot who founded the Cabrière farm in 1694. A bottle of Pierre Jourdan is the perfect accompaniment to enjoy to create memories.

The Underground Cellar

As part of the family’s stories, the history of Haute Cabrière, and their love and philosophy for producing exceptional Cap Classique, a gorgeously whimsical underground cellar was built inside of the mountain creates a fanciful backdrop. Barrels of wine line the quiet cellar as you inhale the aromas of wine and oak.

Wine is more than what is in the bottle and it is considered an exceptionally intimate experience.

The impressive Dom Perignon bottle chandelier casts a beautiful flower motif on the roof. Takuan’s first birthday inspired the creation of the lighting fixture as 30 bottles were consumed by the Von Arnim family in honour of their son’s first birthday.

The cellar itself is charming and adds to the theatrics. From the old European finishes and creative artwork to the magnificent chandelier made from 30 empty Dom Perignon bottles, it all contributes to the exceptional Haute Cabrière experience.

The Réserve Range

This réserve range consists of Chardonnay Réserve, Pinot Noir Réserve and Arnim Family Réserve which gives structure to Haute Cabrière wine selection. Within the range’s Reserve Collection, they have focused on Franschhoek appellation. The wines are aged in barrel to showcase varietal characteristics from the valley’s terroir.

Lunch Réserve Menu

Celebrate life, stories and wonderful food and wine is a key part of the von Arnim family philosophy. A delicious 3-course lunch was paired with their Haute Cabrière’s Réserve range.

We started off with freshly baked bread and burnt caramel butter which was absolutely divine! Starters was a delicious Smoked Cheese and Pea Arancini with Pea Velouté, Pomodoro Sauce with slow roasted tomatoes and crispy basil leaves. Paired with Haute Cabrière Chardonnay Réserve 2021.

Chardonnay Réserve 2021

The latest addition to their reserve range, this wine is elegant with beautiful integration of oak. Matured in 60% French oak and rest in stainless steel. Inviting orange blossom and citrus on the nose, with delicious nutty freshness that follows through onto the palate. Lively acidity with a fresh finish.

Amphora Chardonnay 2020

This single-block wine, made from vineyards planted in 1983, was fermented and matured in 450 litre clay amphorae for 12 months. Enjoy tropical fruit with hints of lime and citrus, followed by great palate weight and a firm acidity.

For Mains it was a choice of Pan-fried Trout, served with Roasted Bell Peppers, Leaks and deep-fried Gnocchi & Beurre Blanc, or Sliced Sirloin served with Mushroom Cream, Crispy Pomme Anna, Pan-fried Oyster Mushrooms, Asparagus and Tarragon Jus. Paired with Haute Cabrière Pinot Noir Réserve 2018 & Haute Cabrière Arnim Family Réserve 2019.

Haute Cabrière Pinot Noir Réserve 2018

This wine is aged for 11 months in specially selected French oak barrels to showcase the vintage characteristics of red berries, forest floor and cigar box, which are supported by well- rounded tannins.

Haute Cabrière Arnim Family Réserve 2019

A pioneering blend of Syrah and Pinot Noir with rich colour and intense red fruit and spice on the nose followed by hints of cedar from the 18 months in French oak barrels. The palate is layered with well-balanced tannins.

Dessert was a delicious Tropical Sago & Panna Cotta served with Passion Fruit Curd, Coconut Panna Cotta, Mango Gel, Coconut Sago and Caramelised Pineapple.
