Have you had the pleasure of exploring Seven Springs Vineyard? Nestled along the scenic R320 Hemel en Aarde Valley road, situated between Hermanus and Caledon, this vineyard stands out as a premium wine producer.
Owned by the passionate couple, Tim and Vaughan Pearson, originally hailing from the UK, Seven Springs is a captivating boutique winery that places a strong emphasis on crafting elegant, single varietal, terroir-driven wines. Their dedication to quality is evident in every bottle.

What makes Seven Springs truly unique is its geographical setting. The vineyard benefits from the nearby ocean influence, and the soils, locally referred to as Bokkeveld shale, impart distinctive characteristics to the grapes. This geological combination creates an ideal environment for slow ripening, allowing the grapes to develop nuanced flavours and complexities.
Sauvignon Blanc

Sauvignon Blanc embodies freshness and vibrancy. Its delightful profile features beautiful floral tones of elderflower and white peach, complemented by subtle hints of asparagus and freshly mown grass. This elegant wine boasts a fine structure and concludes with a crisp, mouth-watering finish.
Unoaked Chardonnay

The striking citrus-lime hue sets the stage for an enticing aroma of apples and pears in this Unoaked Chardonnay. Upon tasting, the initially restrained fruit transforms into a zesty, clean and fresh experience, culminating in a flinty finish. This dry-as-a-bone Chardonnay is light and refreshing, offering a vivid and brilliant expression of the varietal.
Chardonnay

A Chardonnay that has matured in 3rd and 4th fill French-oak barrels, displaying a pale-straw, golden colour tinged with lime. Its fresh and vibrant natural acidity transitions smoothly into a well-rounded mid-palate. Delight in the white-stone-fruit character, complemented by flinty and mineral notes, leading to a long, lingering finish.
Syrah Rosé

Displaying a captivating pomegranate-pink hue and a subtle hint of Turkish delight on the nose, this wine opens with vibrant fruit flavours. The initial fruity tones set the stage for a medium-bodied, textured mid-palate. This is summer in a glass.
Pinot Noir

This Pinot Noir presents aromas of red-berry fruit and strawberries with underlying notes of dried herbs on the nose. The palate showcases a sophisticated interplay of complexity, richness and balance. The tannins are both round and soft yet firm, impart excellent length and structure to the palate.
Syrah

This wine is both full-bodied and well structured. Revel in the opulence of dark blackberry fruit, accompanied by subtle notes of violets and a dash of white pepper. It remains bold, fruity, and well-structured, striking a perfect balance throughout.
In essence, a visit to Seven Springs Vineyard promises not just a taste of exceptional wines but also an immersion into the rich terroir and meticulous craftsmanship that define this charming winemaking haven.
