Seven Springs Vineyard is a boutique wine producer nestled along the scenic R320 Hemel-en-Aarde Valley road, between the coastal charm of Hermanus and the rolling landscapes of Caledon.
Known for crafting elegant, expressive wines, Seven Springs is the passion project of Tim and Vaughn Pearson, whose successful UK-based business enabled them to invest in the South African wine industry. With a dedicated team, they focus on high-quality wines with minimal intervention.
The winemaking reins are now in the capable hands of Pieter Kruger, who recently joined Seven Springs after an extensive career in London’s fine wine sector as a head buyer and operations manager. Pieter’s philosophy is simple. Simplify wine, make it inclusive and celebrate the vineyards and people of the Cape South Coast. His goal is to create wines that are not only exceptional but, as he puts it, “just lekker”— a perfect balance of quality and enjoyment.
Seven Springs offers an intimate, personal wine tasting experience, showcasing a carefully curated range. From Sauvignon Blanc, Unoaked Chardonnay, Oaked Chardonnay to Syrah Rosé, Pinot Noir and Syrah. Each wine reflects the cool-climate elegance of the region, crafted with precision and passion.
A standout in their collection is the limited-edition Seven Springs Art Series Pinot Noir, created in partnership with Nkonzo Wildlife and WineCompany. This special release is part of the Nkonzo Wildlife Conservation Wine Label and features a striking label designed by South African artist Izhaan Joubert. It’s a tribute to conservation with every bottle sold directly supports the preservation of Southern white rhinoceros populations, making each sip a meaningful contribution to protecting these gentle giants.
Sauvignon Blanc
A refreshing and vibrant wine, boasts beautiful floral notes of elderflower and white peach on the nose and palate. It exudes elegance with a fine structure, offering a crisp and lingering finish.
Unoaked Chardonnay
Vivid and brilliant in its citrus-lime hue, reveals an aroma of apples and pears. From the first sip, the restrained fruit gives way to a zesty, clean and fresh finish, complemented by a flinty undertone.
Chardonnay
A beautiful wine with a golden hue and a hint of line, matured in older barrels. It’s fresh with a vibrant natural acidity, which gives way to a well-rounded mid-palate. The wine features white-stone fruit, flinty and mineral notes, with a long, lingering and saliva-inducing dry finish. It’s exceptionally balanced.
Syrah Rosé
A delightful and feminine wine, has a pomegranate-pink colour and a hint of Turkish delight on the nose. Watermelon and raspberry fruit flavours initially set the tone, accompanied by a medium-bodied and textured mid-palate. The wine eventually transitions to a dry, long-lasting finish with an uplifting freshness at the end.
Pinot Noir
With its aromas of red-berry fruit, including strawberries and red currents, hints of dried herbs on the nose. The palate is complex, rich and balanced, exhibiting restrained textures. The tannins are round and soft yet firm, providing the wine with great length and structure.
Syrah 2019
A full-bodied and well-structured wine, is opulent with dark-blackberry fruit. A hint of violets and a pinch of white pepper linger on the finish. The use of older oak barrels emphasises the fruit’s expression, making it bold, fruity, and structured while maintaining balance. Earthy and true to itself, it exudes a unique character.
Seven Springs offers a warm, engaging experience where great wine meets great company and every glass tells a story.
