Thistle & Weed | Wines with Simplicity and Honesty

Thistle & Weed is a boutique winery founded in 2015 from a shared vision between the Terblanche and Wiid families, lef by viticulturist Etienne Terblanche and winemaker Stephanie Wiid. From the beginning the focus has been on character, place and wines with a sense of identity.

Set in the Jonkershoek foothills just outside Stellenbosch, the winery takes inspiration from its natural surroundings and the hardy thistles and weeds growing alongside the vines. Each wine is named after one of these favourite vineyard nuisances, using their colloquial Afrikaans names to remind that these wines are unapologetically Kaaps roots.

Etienne and Stephanie bring the same principles to their vineyards and cellar, nurturing each block with care and work with minimal intervention. The result is a range of wines that are honest, expressive and deeply rooted in their terroir, allowing the fruit to shine.

The intimate cellar is filled with rustic charm and provides a beautiful backdrop for relaxed tastings on the stoep with amazing views of Table Mountain rising in the distance. Add an artisanal cheese and charcuterie platter for an extra treat. Afterall, wine and cheese, warm hospitality, great views and sunny weather complete the experience.

Start off with their newly released Vinkel Brut, a refined sparkling wine made from Chenin Blanc. With Chenin Blanc as their muse, the range continues with 3 single origin expressions from Paarl, Swartland and Stellenbosch. Springdoring, Duwweltjie and Brandnetel each tell a unique story showcasing how terroir shapes style and flavour.

The biodynamic Knapsekêrel Cabernet Franc from Stellenbosch stands proudly as a single red variety that highlights the potential of this compelling black grape variety. Completing the collection are 2 blends inspired by Portugal. Khakibos is a Cape White blend of Verdelho, Chenin Blanc, Alvarinho, Palomino and Fernão Pires, while Nastergal brings together Alicante Bouschet, Touriga Nacional, Souzão and Touriga Francesa. Both reflect a commitment to drought resistant varieties and thoughtful farming in a changing climate.

Booking is by appointment. With a limited number of tables and personalised approach, a visit is definitely worthwhile as their intimate setting creates exclusivity, authenticity and a genuine love for the terroir shines through.
